Spinach Artichoke Dip is one of my favorite appetizers to order at a restaurant. My mom made this recipe growing up and it's fabulous! It's the one item that the rest of my family requests SHE brings to each gathering. This is one of my staples. And the coolest thing? It cooks in the microwave!
Ingredients:
2 blocks of frozen spinach
2 jars of artichokes hearts (liquid reserved)
1 package of shredded monterry jack cheese
4 Tbsp of chopped white onion
2 Tbsp of butter
2 Tbsp of garlic powder
2 Tbsp of lemon pepper
2 Tbsp of mayo
4 Tbsp of sour cream
Start by thawing the two boxes of spinach in the microwave. Follow the directions on the package. Drain as much liquid as you can using a strainer or paper towel. Just let the spinach cool first...it can get pretty hot. Put the spinach in a large mixing bowl.
Meanwhile saute the onions in the butter in a small skillet until they are soft and translucent.
Next, pour the liquid from the artichoke hearts in the bowl with the spinach. Now chop the hearts into bite size pieces.
Add the artichokes to the bowl.
Add the softened onions...
Add your lemon pepper and garlic powder
Add your mayo
Add the sour cream
Mix it all up!
Spread the dip in a glass dish or microwaveable ceramic dish.
Microwave on high for 10 minutes, mixing half-way through (at 5 minutes...that's how math works)
Enjoy your bubbly, creamy, spinach artichoke dip with tortilla chips, crackers or crusty bread!
yum! i've never made this homemade before! must try soon. you could also use plain greek yogurt instead of sour cream!
