Rosemary Potato Cubes
I admit, I'm addicted to Pinterest. This is one of those recipes I stumbled upon during one of those late night "pinning crazes". It's from Delicious Days. I made it as a side dish with my Flank Steak and Horseradish Dipping Sauce. I used the dipping sauce with these and it was fabulous!
Ingredients:
-6-10 waxy potatoes, like Yukon Golds
-3 Tbsp chopped fresh rosemary
-1 Tbsp sea salt
-pepper to taste
-olive oil
Rinse the potatoes and pat dry. Cut the potatoes into 1-inch slices. Slice again so you have potatoes sticks about the thickness of your finger. Cut again to make small cubes.
Place the potato cubes in a large bowl. Chop your rosemary and sprinkle on top the potatoes. Add your olive oil and season with salt and pepper.
Toss until evenly coated.
Line a baking sheet with aluminum foil and spray with cooking spray. Spread the potatoes in an even layer on the sheet.
Bake in the oven for 40 minutes at 400 degrees. After 20 minutes use a spatula to turn the potatoes so they brown evenly.
Serve hot as a great side dish to steak or any meat!
