Easy Tip to Freezing Bacon: How-To

Do you have bacon left-over that you know will go to waste if leave the rest in your fridge?  Ever frozen bacon in the package before to find a huge frozen hunk that would take forever to thaw and you only want 2 pieces!?  I read this recently and thought I'd give it a try after making my Zesty Broccoli Salad,  which only called for a few pieces of bacon.

Needed:

-leftover bacon
-parchment or waxed paper
-rubber bands
-gallon plastic freezer bag

Unroll 12 inches of your parchment or waxed paper.  Use magnets or salt and pepper shakers to keep the paper flat.  Place 2 pieces of bacon on the edge of the paper...or 1 if that's your serving size, which more power to you on self-control!

Roll the bacon and paper over and place another couple pieces.

Repeat until your leftover bacon is gone and all rolled up. Cut a few inches extra off the paper to roll around the bacon one final time.

Fold the ends over and secure with rubber bands.  Stick in a plastic bag and label with the date.  Now, when you need a couple of slices rather than the rest of the package, just pull the paper to release the portion.  Thaw in the fridge or on a plate on the counter for quicker results!
