Crispy Oven Baked French Fries


I don't know how many times I've tried to bake potato wedges or sticks do end up with a soggy mess.  How to you get the crispiness of deep-fried french fries in the oven? Gwyneth Paltrow's trick is to soak the potato slices in ice cold water before baking! Sure enough...it works...everytime. This is my new favorite side dish for black bean or Turkey Burgers.  Serve with some Sriracha Ketchup to heat it up.

Ingredients:

-2-3 large russet potatoes (you can peel if you want)
-2 Tbsp olive oil
-1 Tbsp sea salt

Equipment Needed:

-parchment paper to help prevent sticking
-large bowl of ice water


First, slice your potatoes into 1/2 inch discs and then again to make 1/2 inch sticks. Also, preheat your oven to 450 degrees.



Place the fries in a large bowl of ice water and let soak for at least 10 minutes.

 
 
Drain the water from the fries and throughly pat dry with paper towels.  Drizzle and toss with 2 Tbsp olive oil and 1 Tbsp sea salt. Place on a baking sheet lined with the parchment paper and bake for 25 mins turning the fries a couple of times throughout.

  2. Darn, I'm sorry. Drying the potato slices after the ice back is very key. The dryer they get, the crispier they will be.

  3. I soaked them for about 20 min and left them in the oven for roughly 30 min and they came out great!

  4. Thanks for posting this recipe and others.

    I soaked for a few hours in fridge, drained and rinsed thoroughly. They came out nicely, but not crisp. I suspect it was because I used my silpat. Next time I'll try it on a baking sheet or foil or parchment as you suggest. I do believe soaking and not salting until after the bake are very helpful in reducing/eliminating sogginess. Thanks again.
